Why you shouldn't judge the quality of tea by the name of the tea plantation
Even from the same tea plantation, the quality of different lots varies. The location of the plantation and the processing conditions affect the quality of the tea.
Some people judge price and quality based on the name of the tea plantation, but tea plantations in India are huge corporations that own large mountain areas.
Therefore, even if the tea plantation has the same name, the altitude can range from a few hundred meters to nearly 2000 meters, and the quality can vary. In order to purchase good tea, it is important to actually taste the tea and evaluate the quality and characteristics of each tea leaf.
When we select Darjeeling tea, we place importance on the breadth of the aroma and the depth of flavor. Good tea has a deep taste and aroma, and the aroma lingers in your throat for a long time. In addition, the way the tea is processed, such as the depth of fermentation and the amount of heat applied, can be determined from the name of the tea plantation.
The first flush is green on purpose.
First Flush refers to tea picked first in spring. The green color of the tea leaves is intentionally achieved by shortening the fermentation time. If the fermentation time is extended, the tea can be black tea colored, like Autumnal.
The surprising reason why 1st Flush will hit the market in February-March
Darjeeling 1st Flush starts to appear on the market in February. Darjeeling tea is grown at the same latitude as Fujian Province and Taiwan in China, and further north than Yunnan Province, but the tea is harvested in February and March because it is grown in tea plantations at low altitudes.
Spring comes earlier in tea plantations at lower altitudes. In Darjeeling, the lower the DJ number, the earlier the lot was made, and the tea tends to contain more tea harvested in low-lying tea plantations.
At HOJO, we choose 1st flush coffee from high altitude growing areas.
This is not limited to tea, but can be said for all vegetables and fruits in general: the higher the altitude, the better the quality of the tea, and the more appealing the taste and aroma. We purchase tea by focusing on the altitude of the tea plantation, not the DJ number.
